Meat Loaf with Bar-B-Q Sauce.
This one was given to me by Garry’s mother and it is
always good on a cold winter’s night, served up with good old mashed potatoes,
greens, carrots or whatever other vegetables you have in the pantry or freezer. Today being cool, windy, showery and the first time that I
have worn jeans this autumn, brought this one to mind. Meatloaf: 500g sausage mince (I rarely have this on hand, so I use more mince) 500g mince 1 cup fresh breadcrumbs 2 onions 2 teaspoons curry powder salt and pepper to taste 1 tablespoon chopped parsley 1 egg ½ cup milk ½ cup water. Sauce: ½ cup water ½ cup tomato sauce ¼ cup worcestershire sauce 2 tablespoons vinegar ¼ cup brown sugar 1 teaspoon instant coffee powder 30g butter 2 tablespoons lemon juice Meatloaf: Combine sausage mince, mince, breadcrumbs, peeled & finely chopped onion, curry powder, salt, pepper, parsley & lightly beaten egg in a bowl. Gradually add milk & water. Combine until mixture is smooth. Shape meat mixture into a loaf and place into a greased baking dish. Moderate oven 30 minutes. Remove from oven and carefully pour off any surplus fat. [none to remove if using genetically trimmed Limousin beef] Pour sauce over and return to oven to bake for a further 45 minutes, basting frequently with the sauce. Serve hot with vegetables of choice or cold with a salad. Sauce: Combine all ingredients in a saucepan and bring slowly to the boil Reduce heat and simmer for five minutes. ENJOY!
