Fruit with Mascarpone
I have found a really interesting dessert that I will try one day as soon as I can work out what mascarpone
is. In the meantime, I will use a scoop or two of ice-cream.
I also have another dessert recipe that would use up that tub of
mascarpone, but for it I cannot use ice-cream.
I will include this recipe on my next update.
Ingredients:
12 pieces of stone fruit of your choice, halved [peeled if
you like]
¼ cup vanilla sugar
¼ cup brandy
250g tub mascarpone
Arrange fruit – cut side up – on a foil-lined baking
tray. Sprinkle with sugar.
Drizzle with brandy. Bake in
a hot oven [200C] for 10 minutes or until tender and golden.
Alternatively, grill under a hot grill.
Arrange fruit on plates and serve with a scoop of
mascarpone
